Award-winning pastry artisan, successful entrepreneur, and inspiring lecturer described as a great teacher and storyteller, Chef William Werner of Craftsman and Wolves (CAW) contemporary pâtisserie and café, is returning to the PreGel International Training Centers to deliver another invigorating lecture on contemporary patisserie.
During this highly anticipated visit, Chef Werner will share his extensive culinary expertise with class attendees of the PreGel ITC, who will examine:
- Classic and modern techniques to create a variety of patisserie items including entremets, tarts, baked goods and confections for a wide range of occasions
- The significance of flavor and texture variations in desserts
- Techniques to decorate and present an upscale buffet of desserts
* For the price of this class, you will receive a customized class recipe book featuring original recipes by Chef William Werner; 3-night hotel accommodations; transportation to and from hotel lodging facilities; daily lunch provided by PreGel; professionally taken photographs of the entire class experience; a PreGel certificate of completion; and 24 Continuing Education Hours certified by the American Culinary Federation. To maintain an intimate learning environment, class sizes are no larger than 20 students max.
