Expanding upon the Fundamentals of Gelato and Sorbetto course, this class helps attendees fine-tune their gelato making skills with advanced recipes and decorating techniques. Students will delve a little deeper into the science behind gelato and sorbetto, and use this new knowledge to create amazing flavor combinations. This class will also cover the formulation of gelato mix with egg yolks, premium sorbetto with a high ratio of real fruit, and the formulation of alcoholic gelatos and sorbettos. At the end of the course, students will leave with a large assortment of recipes and a repertoire of new decorating techniques.
