Join us in this hands-on, two-day course on the creation of artisanal ice cream, as we explore a variety of classic and modern flavor combinations and decorating techniques. Attendees will gain a basic knowledge of the science behind what makes a great ice cream, and will leave the class confident in their ability to produce it. During the course, a variety of batch freezers and display cases will be used so that students can get a feel for what’s out there. This course is perfect for beginners wanting to learn about ice cream, as well as seasoned professionals looking for some fresh ideas. Topics covered include basic recipe formulation, cleaning and sanitizing procedures, serving tips, and troubleshooting.
